2 Ingredient Banana Blueberry Ice Cream

I’m a huge fan of simple and healthy recipes. Especially when I’m really busy cooking and “baking” raw treats for my customers and stockist, the last thing I feel like doing is some more cooking for myself! It doesn’t get much more simple than this 2 ingredient banana blueberry ice cream. It literally only requires frozen bananas and frozen (or fresh) blueberries. That’s it! You know the best part of it, you can have ice cream like this for breakfast. Winning! That’s exactly what I did this morning before my massive cardio work out. And then I got home and had some more banana blueberry ice cream. And check out that color! Isn’t it gorgeous or what?

All you need to do, is to have frozen bananas and blueberries ready in the freezer. Blend them together and you are done. Takes 2 minutes and you have beautiful and healthy ice cream.

Banana Blueberry Ice Cream

Ingredients
2 frozen bananas, sliced
1/2 – 1 cup frozen blueberries
plant based milk (optional)

Banana Blueberry Ice Cream

Instructions

  1. Place frozen bananas and blueberries in food processor and run until smooth. It might take a while, but the mixture will turn smooth and creamy. Try not to use any liquid, but if the mixture appears too dry, add few tablespoons of plant based milk or water.
  2. Serve and enjoy!

    Hey Amanda,

    Thank you for your message! 🙂 You could use avocados to give the “ice cream” the same creamy texture. With avocado, you would need to use coconut cream or other liquid in it. I will be posting an avocado ice cream recipe soon, too 😉
