Cheese Sauce (Vegan)

Often vegan or raw recipes contain lots of oil, nuts or both, but not this cheese sauce! You could say the ingredients are a bit surprising in this recipe. I would lie, if I told you this tastes exactly like cheese, but it’s pretty darn tasty nevertheless. This cheese sauce contains no dairy, no oil, no nuts, no gluten, no sugar. Say what!? What does it contain then, right! Cheesy flavor comes from nutritional yeast (my all time favorite add on, I sprinkle that to everything). I used to be the biggest cheese addict before my vegan days, and nutritional yeast has the closest flavor to cheese.

I used this cheese sauce as a dip for my chippies last night, so I left the mixture thick. If you use it as a cheese sauce, add more water.

Cheese Sauce

Ingredients
2 large potatoes, boiled
1 carrot, boiled
1 cup water or vegetable broth (or as required)
2 tbsp lemon juice
1 cup nutritional yeast
1 tbsp onion powder
1/2 tbsp garlic powde
1 tsp smoked paprika
1 pickeled jalapeno, diced small (optional)
salt and pepper to taste

Instructions

  1. Boil potatoes and carrots until soft then let cool down a bit.
  2. Place potatoes and carrots in a food processor bowl with all rest of the ingredients. Blend until smooth. Adjust the seasoning and amount of water needed.
