Crunchy Asian Salad with Spicy Peanut Balls

Summer is coming and that means fresh and lighter meals! At least for me. When the weather is cold, I enjoy eating warming hearty meals and summer time is all about fresh and light food. This Crunchy Asian Salad brings together best from both worlds. Colorful, fresh vegetables and herbs served with baked spicy, crunchy peanut balls. I keep changing this peanut ball recipe every now and then, but for this recipe I made the balls using quinoa and chickpeas. You can use your favorite beans, legumes and vegetables to make these. Using peanut butter in the mix ensures the mixture sticks together nicely despite the other ingredients you use.

I also made a gorgeous spicy peanut sauce with extra kick from ginger. Highly recommend making this sauce! What’s the second best thing about this dish, after tasting amazing? It’s packed with protein, fiber and vitamins.

Crunchy Asian Salad


Peanut Balls
1 can chickpeas, drained
1 cup cooked quinoa
1/4 cup peanut butter
4 tbsp tamari or soy sauce
1/4 cup fresh coriander, chopped
1 tbsp onion powder
1 tbsp chili sauce
1/2 tsp garlic powder
1/2 tbsp ginger powder or fresh ginger
1/2 cup peanuts

Spicy Peanut Sauce
1 cup peanut butter
1/4 cup tamari or soy sauce
1/4 cup chili sauce
1/2 tbsp ginger powder
1 tbsp onion powder
1/2 tbsp garlic powder
water if needed to thin

Salad (amount as preferred)
purple cabbage, thinly sliced
baby spinach
ice berg or cos lettuce
carrot, saved thin
fresh coriander
fresh mint

Crunchy Asian Salad


  1. Preheat oven to 175’C.
  2. Place all the peanut ball ingredients into a food processor and pulse until coarse mixture is formed. Add more peanuts if the mixture is too wet. Taste and adjust the seasoning.
  3. Roll the dough into balls. Place the balls on lined baking sheet and bake for 15 minutes. Then turn and bake for another 15 minutes.
  4. In the meanwhile, Place all the spicy peanut sauce ingredients into a small bowl and mix until well combined. Use a much water as needed for wanted consistency.
  5. Once the peanut balls are ready, remove from the oven and set aside.
  6. Prepare the salad (you can use your preferred veggies and greens).
  7. Serve peanut balls with crunchy Asian salad and peanut sauce.Enjoy! Crunchy Asian Salad
