One of my all time favorite breakfasts ever is granola with coconut yogurt. It’s so good and filling. I’ve been recipe creating with coconut yogurt lately, since I found new unsweetened Nudie coconut yogurt from Woolworth’s. I am so excited that more and more vegan options are available at normal grocery stores. If you are busy in the mornings like I am, these granola yogurt pops are your savior! Make a batch of them, store in the freezer and grab one to go, when you just don’t have time to sit down to eat breakfast in the morning!
I used to make raw “gRAWnola” to sell at the markets. Often people asked me what to use it for. Well, these granola yogurt pops, for example! You can use what ever granola you like, though, doesn’t matter 🙂 You most likely already have some sort of granola in your pantry. All you need to do, is to go buy coconut yogurt and you are all set to make these. Again, if you don’t have Popsicle molds, just use cupcake papers/molds or something similar.
1 cup granola
1 cup coconut yogurt
1 tbsp maple syrup
1/4 cup date paste
- Mix coconut yogurt and maple syrup together. If you use sweetened coconut yogurt and it sweet enough for you, skip this step.
- Use ready made date paste or make your own by blending soft dates with little bit of water. The mixture needs to be thick and sticky still, to bind the granola together.
- Mix granola with date paste and press the mixture in the bottom of the Popsicle molds. Fill 1/4 – 1/3 of the mold. Press the mixture in tightly. If you have more granola mixture left, blend it in to coconut yogurt. Pour the coconut yogurt into the Popsicle molds and freeze. Once the granola yogurt Popsicle are frozen, carefully remove from the Popsicle molds and enjoy. Store in the freezer.
