Hasselback Potatoes

Happy National Potato Day! Can you believe a day like this actually exists? When I heard about this day, it made me wonder, if there’s a national day for all kinds of food items? I know there’s a day for chocolate and donuts. Potatoes definitely deserve a day of their own! In honor of national potato day, I’ll share this hasselback potatoes recipe with you. This has to be one of my favorite potato recipes. In top 5 with fries and mash potato, for sure!

I hear it also a national hot and spicy day today ( I swear I am not making this up!) so maybe you could serve these hasselback potatoes with some spicy sauce or spice with some chili powder. I kept my recipe super simple, what comes to spices, but served the hasselback potatoes with home made cashew sour cream! If you haven’t tried my sour cream recipe yet, it is gorgeous with this recipe! If you want to, you can add any herbs and spices you like and just add them with all the other spices, mentioned in this recipe.

Hasselback Potatoes

Ingredients

8 medium sized white potatoes
olive oil
5-6 tsp crushed garlic
onion powder, to taste
salt and black pepper, to taste

Hasselback Potatoes

Instructions

  1. Preheat oven to 200’C.
  2. Thinly slice potatoes 2/3 down and place them on a baking sheet or dish.
  3. Add a drizzle of olive oil and sprinkle on garlic and seasoning. Gently give the potatoes a little rub, to spread the oil and seasoning evenly.
  4. Bake in the over for 45 – 60 minutes or until tender and golden.
  5. Remove from the oven and serve. Enjoy! Hasselback Potatoes
