You know those mornings, when you just need something quick to grab and go, for breakfast? These oat energy bites are made for those mornings! You can make a big batch of these and store them in the fridge or in the freezer for disastrous mornings! We all have them. I also love these as a snack in the afternoon, because nothing beats a home made energy bars and bites. These oat energy bites are packed with good quality plant based proteins, hello oats and nut butter. And they also provide you with some good quality omegas from flax meal, and carbs from oats, that keep you satisfied until lunch. The best thing about these oat energy bites is, that they are so simple to make, and you probably already have all the ingredients in your pantry. No blender and extra washing up needed either, just mix all the ingredients in a bowl, roll and enjoy!
I wanted to keep this recipe super simple, for a reason.But if you like, you could throw in some dairy free chocolate chips, if you like. I decided to use maple syrup for sweetness, but feel free to use your favorite sweetener. This recipe is not gluten free, because of the oats, but if you require gluten free version, you can replace oats with quinoa flakes, or other gluten free flakes. I used peanut butter in these oat energy bites, because peanut butter (hello!) but you can substitute with any nut butter of your choice.
1 cup oats
1/2 cup peanut butter
1/3 cup maple syrup
2 tbsp golden flax meal or ground flax seeds
- Place all the ingredients into a mixing bowl and mix it all together with a spoon.
- Roll into balls and enjoy! Store these oat energy bites in a fridge or in a freezer.
