Raw Bounty Bar

Happy  Thursday! Weekend is nearly here and I am planning to take it easy this weekend, spend some quality time with my man and maybe go for a bike ride. Do you have anything special planned for the weekend? This raw bounty bar is a very much requested recipe of mine, and I thought I’d share it with you guys. Maybe you can enjoy a healthy and raw bounty bar as your weekend treat!

Bounty Bar

To make these bounty bars, I used coconut oil, just because I had no coconut butter left in my cupboard! *sigh* The coconut butter has a much stronger coconutty flavor to it, but now we know, that using coconut oil works too 😀 So, feel free to use which ever you have available. I also used maple syrup as a sweetener, but you can use your favorite liquid sweetener. To speed up the process of making this bounty bar recipe, you can use your favorite store bought vegan chocolate for the coating. All you need to do, is to melt the chocolate and dip the frozen bounty bar in it. But making your own raw chocolate is super quick and easy, too!

Bounty Bar

Ingredients

Coconut Filling
2 cups desiccated coconut
1/3 cup coconut oil, melted
1/4 cup maple syrup
1/2 cup coconut cream

Chocolate Coating
1/3 coconut oil, melted
1/3 cup rice malt syrup 0r maple syrup
1/3 cup raw cacao powder

more desiccated coconut for decorating

Instructions

  1. Mix all the filling ingredients together and spread the mixture in the lined cake tin or silicone molds and pop in the freezer to set.
  2. Once the filling mixture is set, remove from the freezer and cut into bite sized pieces.
  3. Mix all the chocolate ingredients together (or melt store bought vegan chocolate). Dunk the bounty bar pieces in chocolate and place back in the freezer to set.
  4. Once the chocolate is firm, trim the edges of the bounty bars and sprinkle on some more desiccated coconut. Store in  the fridge or in the freezer. Enjoy! Bounty Bar
