You might be familiar with honey mustard salad dressing. It is, after all, a classic. I have veganized it, using maple syrup instead. And it is just beautiful! Go ahead and try it! I think this maple mustard salad dressing goes well with most salads, but it is divine with quinoa. So if you are a bit over eating salads or think it just tastes boring. Sprinkle on some of this maple mustard dressing. I promise you, you will like it.
I love mustard, so I used quite a bit of it for this recipe. You can play with the measurements to match your liking. It will work well with less oil too, if you are that way inclined.
1/4 cup freshly squeezed lemon juice
1/4 cup extra virgin olive oil
1/4 cup maple syrup
1/4 cup Dijon mustard
black pepper to taste (optional)
Place all the ingredients in a glass jar with a lid. Make sure the lid is tight! Vigorously shake the jar till the dressing is emulsified. Taste test and adjust if needed.
Store the dressing in that same jar in the fridge.
